Baigorri Reserva is a red wine made using only selected Tempranillo grapes from old vines with a limited production. They undergo a long maceration in stainless-steel tanks and French oak barrels; malolactic fermentation to maintain freshness and complexity and eighteen months ageing in new French oak barrels.
The result is a highly-concentrated, dark cherry-red wine, with aromas of black fruit. In the mouth it is expansive, elegant and well-balanced. The long and intense complex finish carries on the pleasure with a cracking aftertaste.
Special extra mention must be made of Bodegas Baigorri’s unique blend of traditional philosophy based around quality and state-of-the-art technology. The building is cleverly constructed to aid the winemakers produce the best wine from the grapes.
This ultra modern winery is carved out of the mountain, with a top floor entrance that has outstanding panoramic views over the vineyards, to the Ebro river valley and the rocky crests of the Cantabrian mountain range beyond; beneath this, there are six floors designed to deal with the specific stages of winemaking and maturation. Grapes, must and developing wine are transported between each location by gravity; travelling down through the winery from the selection tables all the way to the bottling line without hoppers or pumps, which makes for gentle handling and results in a superior finished wine.
